Mutton Mandi is a traditional Arabic dish with tender mutton served on a bed of flavorful rice. Here's how to prepare Saudi-style Mutton Mandi:

Ingredients:

  • 1 kg mutton pieces
  • 3 cups basmati rice
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tomatoes, chopped
  • 2 tablespoons Mandi spice mix*
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • Salt to taste
  • 4 cups water
  • 1/4 cup vegetable oil
  • Saffron threads (optional, for garnish)

Instructions:

  1. Marinate the Mutton:

  2. In a bowl, combine the mutton pieces with Mandi spice mix, turmeric powder, cumin powder, minced garlic, and salt. Mix well and let it marinate for at least 1 hour.

  3. Prepare the Rice:

  4. Rinse the basmati rice under cold water until the water runs clear. In a pot, heat vegetable oil and sauté sliced onions until golden brown. Add chopped tomatoes and cook until they soften. Then, add the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer until the rice is cooked and water is absorbed.

  5. Cook the Mutton:

  6. In a separate pot, heat oil and add the marinated mutton pieces. Brown the mutton on all sides until it develops a golden color. Add water to cover the mutton, bring to a boil, then reduce heat to low and simmer until the mutton is tender and cooked through.

  8. In a serving platter, arrange the cooked rice and place the tender mutton pieces on top. Garnish with saffron threads for an extra touch of flavor and aroma.
