Recipe for Saudi Mutton Mandi
Mutton Mandi is a traditional Arabic dish with tender mutton served on a bed of flavorful rice. Here's how to prepare Saudi-style Mutton Mandi:
Ingredients:
- 1 kg mutton pieces
- 3 cups basmati rice
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 tomatoes, chopped
- 2 tablespoons Mandi spice mix*
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- Salt to taste
- 4 cups water
- 1/4 cup vegetable oil
- Saffron threads (optional, for garnish)
Instructions:
Marinate the Mutton:
In a bowl, combine the mutton pieces with Mandi spice mix, turmeric powder, cumin powder, minced garlic, and salt. Mix well and let it marinate for at least 1 hour.
Prepare the Rice:
Rinse the basmati rice under cold water until the water runs clear. In a pot, heat vegetable oil and sauté sliced onions until golden brown. Add chopped tomatoes and cook until they soften. Then, add the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer until the rice is cooked and water is absorbed.
Cook the Mutton:
In a separate pot, heat oil and add the marinated mutton pieces. Brown the mutton on all sides until it develops a golden color. Add water to cover the mutton, bring to a boil, then reduce heat to low and simmer until the mutton is tender and cooked through.
Assemble the Dish:
In a serving platter, arrange the cooked rice and place the tender mutton pieces on top. Garnish with saffron threads for an extra touch of flavor and aroma.
Serve Hot:
Saudi Mutton Mandi is best enjoyed hot, with a side of salad or yogurt sauce.
